Things to Talk About at the Table; Replacing fat, sugar, and salt in traditional and ethnic dishes with seasonings and spices can be just as tasty and a lot healthier says well-known chef Wiley Mullins.

Responding to a surging epidemic of overweight and obesity in the US, prominent chef and health advocate Wiley Mullins is redoubling his efforts to educate those at risk to make better dietary choices to reduce dangerous excess belly fat that can lead to cancer, hypertension and diabetes.

A delicious way to achieve this, according to Mullins, is to replace the fat, sugar and salt in traditional and ethnic dishes with Wiley’s Southern Seasonings and Spices, a brand he created and sells through chain grocery retailers, mass merchandisers, chain drug stores, and online at unclewileys.com.

“The statistics are alarming,” says Mullins. “65% of the US population and 75-80% of African-Americans are now overweight or obese. The average adult weight in the South is 233 pounds! So, I’m challenging everyone in America affected by this, whether themselves or loved ones, to discover just how tasty cooking with spices and seasonings can be, with no fatty frying, no loading up on sugar and salt.”

Among the variety of flavor-enhancing products sold under the Wiley’s name are seasonings for wings, garden greens like kale, collard greens and turnip greens, corn on the cob, beans and peas, and spices for yams and sweet potatoes. Each seasoning packet comes with a special recipe and many more can be found on the company’s website.

“The beauty in cooking with seasonings,” says Mullins, “is that families can still enjoy the Southern and ethnic dishes they’ve always loved, while slashing the calories, cholesterol and fat that contribute to unhealthy weight gain and life-threatening conditions.”

Mullins has dedicated his life’s work as a chef, marketer and proponent of healthy living to the memory of his brother, who succumbed to diabetes at a young age. Another health initiative undertaken by Mullins is his Every Inch Matters campaign, featuring a tape measure that flags dangerous waistlines for men and women and offers weight-reducing tips.
